Among the Kanbayashi Shunshō usucha portfolio, Biwa no Shiro stands out as a high-quality usucha. Shogun Ashikaga Yoshimitsu, renowned for constructing the Golden Pavilion, had a deep appreciation for Uji tea and established seven tea gardens, one of which is the Biwa that inspired this tea’s name.
This tea features an enchanting sweet milk caramel aroma, a complex and multifaceted flavor profile, and a silky, indulgent texture.
When prepared as usucha, it offers a dominant nuttiness with notes of macadamia and cashew, layered with a darker, woodsy undertone reminiscent of sandalwood. This woodsy element adds a unique character to the tea, leaving a sweet and nutty aftertaste that lingers long after the last sip.
