The classical thin tea (usucha) known as “Fifty Bells,” named after the river at Ise Shrine, presents a bolder profile compared to the Aoarashi in the lineup. This matcha is marked by a more assertive character with pronounced, tangy amino acid notes. For a softer taste, try preparing it with water at a lower temperature (70°C), which can mellow the tartness and enhance the flavor.
This tea offers a harmonious balance of refreshing aroma, astringent umami, and slight bitterness. It is ideal for making thin tea and also works well when mixed with milk or cream.
