Hikaru is a first‑harvest, JAS‑certified organic matcha sourced from a farm in Shizuoka, one of Japan’s most renowned green tea regions. It is crafted primarily from the Yabukita cultivar, with a touch of Samidori to round out the umami profile and create a lush, full‑bodied character. The leaves are shaded, hand‑picked, and processed at peak freshness, then traditionally stone‑milled in small batches to preserve the matcha’s color, fine texture, and bold, savory depth.

Organic matcha tends to look more muted or yellow‑green because it’s grown without synthetic nitrogen fertilizers that boost chlorophyll, resulting in a naturally softer color.

Compared to Akari, Hikaru is more on the bitter and vegetal taste, and has a smooth mouthful finish. We would recommend this in a latte. 3g is enough.
